Crispy Beef BBQ Chipotle Tacos with Charred Corn Guacamole by Meals with Monica

Tacos
avocado oil spray
1 lb ground beef
¾ cup Tia Lupita BBQ Chipotle Tinga Sauce
shredded mexican cheese
soft corn tortillas
Charred Corn Guacamole
1 tbsp avocado oil
1 cup sweet corn kernels
1 ½ medium-sized avocados
1 cup lightly packed cilantro
¼ cup chives
1 jalapeño, finely chopped
juice from 2 limes
pinch of salt
2-3 tbsp of water
Instructions
1. Char the corn: Heat the avocado oil in a large skillet over medium-high heat. Add the corn kernels and cook for 5-7 minutes, stirring occasionally, until lightly charred and golden. Remove from the heat and set aside.
2. Make the charred corn guacamole: Add the avocados, cilantro, chives, jalapeño, lime juice, and a pinch of salt to a food processor. Blend until mostly smooth. Add 2 tablespoons of water and blend again until creamy, adding another tablespoon if needed to reach your desired consistency. Taste and adjust the seasoning as needed. Transfer to a serving bowl and top with the charred corn. If desired, finish with a drizzle of extra virgin olive oil.
3. Cook the beef: Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked through. Stir in the Tia Lupita BBQ Chipotle Tinga Sauce and bring to a gentle simmer. Cook for 5 minutes, allowing the flavors to meld together. Remove from the heat.
4. Warm the tortillas: Place 4-5 corn tortillas on a plate and cover with a damp paper towel. Microwave for 30 seconds, or until warm and pliable. This helps prevent cracking when folding.
5. Assemble and crisp the tacos: Lightly spray a skillet with avocado oil and heat over medium-high heat. Spoon a layer of the beef mixture onto one half of each tortilla and top with a generous sprinkle of shredded cheese. Fold the tortilla over to create a taco and gently press down. Cook for 2–3 minutes per side, or until the tortilla is golden and crisp and the cheese has melted.
6. Carefully open each taco and add a spoonful of the charred corn guacamole. Fold closed and serve immediately while hot and crispy. Enjoy!
