If using wooden skewers, soak skewers in water while you prepare ingredients.
Slice vegetables into large pieces (about 1.5” square). Leave mushrooms whole.
Place shrimp, peppers, onions, and mushrooms in an alternating pattern on the skewers.
Place on a platter and brush with avocado oil.
Sprinkle with salt and pepper.
Grill skewers on medium heat until shrimp are pink and cooked through.
Serve in warmed Tia Lupita Tortillas and top with your favorite Tia Lupita Hot Sauce.
