Garden Vegetable Tacos
Red bell pepper
Olive and canola oil
Spices (cumin, chili powder, salt and pepper)
Tia Lupita Cactus Corn Masa Tortillas
Tia Lupita Habanero Hot Sauce
Prep the fresh veggies, by washing, cutting and placing on a roasting sheet. Reserve beans, cilantro and lime juice.
Drizzle with veggies oil and sprinkle with spices. Toss to combine.
Roast for 20 minutes, stirring the veggies halfway through.
Once the vegetables have finished roasting, add the black beans, lime juice and cilantro to the pan and stir.
Spray each tortilla with a little olive oil on each side and warm in a pan for about 30 seconds on each side.
Serve veggie taco filling in warm tortillas, top with smashed avocado, Tia Lupita Habanero Hot Sauce and enjoy!
